Rebel Bread is a small-batch bakery that makes breads, pastries, and sandwiches that people love to eat everyday. They feature Colorado-grown, heritage grains in all their products, giving the classics a Western edge. They strive to honor the people and characters who inspire them in everything they make.
They craft unique, top-notch loaves and pastries with a lot of personality. They love making things that are “just different enough” – inspired by the classics, with inventive twists dreamed up by their bakers.
Their products are made with regional grains and are naturally-leavened whenever possible – supporting our local economy, sustainable agriculture, and better health through great food. Everything they make is handmade, and baked fresh daily right here in Denver.
Rebel Bread is Denver born and raised, but they are undeniably influenced by their founder and owner Zach Martinucci’s Italian heritage. Many of their baked goods draw on classic Italian recipes, and cameos from an Italian lifestyle make regular appearances here (think single-shot cappuccinos and gossip-filled pasta classes). They are inspired by tradition, but they are a true Colorado bakery built for and by the characters and people they meet in our community.
Little Owl.
Little Owl is built around two things (well…three if you count coffee): passion, and compassion.
Passion: They believe that everyone deserves great coffee. Duh. They also believe that if you’re going to do something, you may as well pour your heart and soul into it. They really like coffee. They are really good at coffee. They made a coffee company.
We’re a close-knit crew of service centered and quality obsessed individuals. We like people, we love coffee, and we’re here to take it to the next level.
Penrose blend. It’s 70% washed process from Guatemala, 30% washed process from Mexico, and 100% your new best friend. They put this blend together to be good as one thing and one thing only: everything. It has massive body, deep rustic sweetness, and a super approachable fruitiness that’ll remind you that yes, this is Little Owl, and yes, they love complex coffees.
